Curried lentil soup

This fragrant soup is perfect for warming you up on cold winter nights. The curry powder mixed with lentils gives a beautiful tasting dish.

This tasty soup is ready in under 30 minutes and is gluten free. For ease all ingredients can be combined into a microwaveable container and cooked. An extra tip: Add some dried chilli flakes for an extra kick.

Ingredients

  • 200g lentils
  • 700ml water
  • 2 teaspoons tomato puree
  • 1 vegetable stock cube
  • 50ml coconut milk
  • 4 teaspoons extra virgin olive oil
  • salt
  • pepper

Preparation

Step 1
Rinse the lentils, place them in a microwave-friendly bowl and add a little oil, vegetable stock, tomato puree and curry powder. Add salt and pepper and the coconut milk.

Step 2
Select the Microwave function with 750W power level. Cooking time: 18 min.
